Citrus Lime Salad Dressing

I made this up for Nicole's Graduation Dinner, May 10, 2003. Everyone loved it and it's so refreshing!!

Ingredients

1 c. Good olive oil

about 1/2 c. Water

1 c. Asian vinegar--any kind (I like red pepper)

3 t. Frozen lime juice concentrate

Garlic powder, opt.

S. & Pepper

Preparation

Mix all together

Pour into a bottle and shake well

Refrigerate

Cook's Notes

This dressing is especially delicious on a summer salad:

1. Mixed baby greens, arugula, etc.
2. Grape tomatoes
3. Chives or scallions or Vidalia onion, sliced fine
4. Mandarin oranges, w/o juice
5. Slivered almonds
6. Sliced strawberries
