Kedgeree (Fish)

Looking for something Special for your family's meal tonight? Try this and let the children help create this wonderful fish entre!

Ingredients

1 Lemon , quartered to serve

17.6 oz Smoked haddock or cod

1/4 cup Cream

1 piece Lemon rind

2 Egg yolks

1 Bay leaf

1/4 cup Finely chopped parsley

2 11 0z butter

3 Hard boiled eggs, chopped

1 Large onion, finely chopped

1 teaspoon Curry powder

3 cups Cooked Basmati rice, kept hot

Preparation

1.-Put haddock or cod in large pan with bay leaf and lemon rind. Wrap with water. Bring to boil; simmer 6-8 minutes until cooked. Drain, skin, bone and flake fish; put aside.

2.- Heat butter in large frying pan. Put curry powder and onion. Stir 5 minutes or until onion is soft, but not browned.

3.-Include eggs, rice, parsley and mix well with egg yolks and cream.

4.- Serve very hot with lemon quarters.

Cook's Notes

Make sure the butter does NOT burn!
