Ingredients
1 1/2 cups 1 percent milk (1 1/2 protein and 1 1/2 carbohydrate)
1 1/2 cups Nonfat ricotta (6 blocks protein)
3 cups Solid packed canned pumpkin (3 cups carbohydrate
When fiber is subtracted)
1 box (3.4 oz) sugar-free, fat-free Jello butterscotch pudding
(3 block carbs)
24 Almonds, eight blocks fat
1 teaspoon Vanilla
1/2 teaspoon Cinnamon
1/4 teaspoon Cloves
Preparation
Put ricotta cheese, milk, pumpkin, pudding mix and spices in large bowl. Mix slowly at first, then beat with mixer for one minute at low speed until fully mixed. Place in eight small dessert bowls. Place three almonds on each separate pudding bowl and sprinkle with a touch of cinnamon. Chill until set and enjoy.

Check package labels because gram sizes vary from product-to-product.
Although the mousse is made with an "unfavorable" type of carb (nutrasweet in the pudding), I believe that this would make a great substitute for pumpkin pie at any time. This should help everyone stay Zoneful for Thanksgiving. - Esther L.
