Ingredients

2 Large potatoes
1 Bell pepper
1 tbs Ricotta cheese
1 Egg
Mozzarella

Preparation

Scoop out the inside of one baked potato and put in bowl

Add vegetables like green and red bell peppers (about 1-3 TBL)

Add 1 TBL low fat ricotta cheese

Add 1 egg to hold it altogether.

Roll mixture into a ball, and cook it on a skillet or griddle.

Optional: Top with pizza sauce and some part skim mozzarella.
