Caesar Salad

ATTN Garlic Lovers! This is the best Caesar salad around! Get your greens, the antioxidant effects of garlic and LDL lowering effect from olive oil all in one recipe! Add some fresh baked bread and you've got an entire meal!

Ingredients

2 Heads washed, Romaine lettuce

1 Egg (boiled for 1 minute)

4 cloves Fresh garlic, minced

4 tbsp Red wine vinegar

6 tbsp Olive oil

Juice from 1/2 lemon

8oz Pkg shredded parmesan cheese

Salt, pepper to taste

Preparation

Wash and dry lettuce. Tear into bite sized pieces into large pot. Add minced garlic. Boil water in small pan. Add egg to boiling water for one minute only to kill off potential bacteria. To the lettuce add egg, lemon juice, vinegar, olive oil. Mix. Add cheese. Mix. Taste and adjust oil, vinegar and lemon as needed.

Cook's Notes

Most of the time is taken by washing and drying the lettuce to remove bugs, sand etc. I prefer to use my hand to mix. After you make the salad a few times, you get the knack and it becomes a staple. I love garlic, so I put in anywhere from four to six cloves.
