7 Minute Frosting

Ingredients

1/3 cup Cold water
2 Egg whites
1 1/2 cup Sugar
1/3 cup Corn syrup
1/8-1/4 tsp Cream of tarter
1 tsp Vanilla
 Food coloring if desired

Preparation

Beat first five ingredients on low for 30 seconds. Put over pan of boiling water and beat on high for 7 minutes. Make sure your pan of water is not touching the bottom of your ingredient bowl. Remove and beat 2-3 more minutes adding vanilla and food coloring. Frosting should be fluffy and form peaks.

This is a delicious, marshmallow-like frosting. It is best to make and use it the same day although I refrigerated it overnight. I brought it to room temp before spreading it on cupcakes the next day.
