Low carb meatballs with pork, beef, cheddar, egg and onion that are perfect for a meaty breakfast or any meal.

Ingredients
1/2 lb Cheddar cheese, shredded
3 Large eggs
32 oz Pork sausage
2 tbs Onion, minced
1 lb Lean ground beef
Preparation
1.Pre-heat oven to 350° F (175° C).
2.Combine all ingredients and pepper to taste in a bowl, and mix thoroughly.
3.Roll into 1 1/2" balls or drop by spoonfuls onto a cooking sheet.
4.Bake for 18-20 minutes.
Cook's Notes
Makes 50 to 60 meatballs. 3-4 per serving.
Freezes well for later use.
