Feta Cucumber Mint Salad

A very simple but sumptuous recipe!

Ingredients

2 English cucumbers cubed 1"

200g Feta cheese (in tub not dry pack) cubed

1/4 cup Packed mint leaves chopped

1/2 Lemon zest

1 Part olive oil to

3 Part lemon juice (to make about 1/4 cup)

Salt and fresh groud pepper

Preparation

mix together in bowl cucumber, feta, mint, and lemon zest.


place oil, lemon juice, and good pinch of salt in small jar. Close and shake to emulsify.


pour over other ingredients, grind on some pepper, and toss lightly to coat.


serve immediately.

Cook's Notes

This salad travels well. Just leave dressing in jar and toss just before serving.
