Ingredients

4 Boneless Skinless Breast Fillets
1 (8 oz) can Crushed Pineapple (juice drained and reserved)
1/2 cup White sugar
2 tbs Lemon juice
1 tsp Dry mustard

Preparation

Rinse chicken, pat dry. preheat oven to 350 F. Combine the pineapple juice, sugar, lemon juice, and mustard in a small bowl. Mix together and stir in the pineapple. Place chicken breast in 9x13 inch baking dish coated with cooking spray. Spread the pineapple mixture over the chicken. Bake in preheated oven for 45 min or until juices run clear.

Very good...and very light. Served with a little rice and it was a perfect spring meal. I agree that the sugar might be unnecessary. Cut it to 1/8 cup but will eliminate it in future efforts.

Excellent flavor! Incredibly juicy. I will leave out the sugar next time as there is enough in the juice. Will try to find unsweetened pineapple for the next time. I could eat this a couple times a week!

Would this be as good if I cut the sugar down or left it out altogether?
