Fried rice is a great way to use up leftover rice and chicken! Delicious, and the whole family loves it!

Ingredients
2 tbsp Sesame oil
2 tbsp Extra virgin olive oil
6 cups White rice, cooked and cooled
2 Carrots, shredded
1 cup Frozen peas
1 bunch Green onions, chopped
4 Eggs
1 cup Chicken, cooked and finely chopped
1 tbsp Soy sauce
Salt to taste
Pepper to taste
Preparation
Heat both oils over medium-high heat in a wok or large nonstick skillet.
In a small bowl, beat eggs.
Add rice to the oiled wok and stir until it loses its sticky texture. Stir in carrots and peas.
Push rice mixture to the side of the pan and cook eggs on exposed pan surface. Slowly stir into rice mixture as the eggs cook.
Stir in green onions, chicken (if desired), soy sauce, and salt and pepper. Continue cooking and stirring until chicken is heated through. Serve or cool and freeze in ziplock bags.

This dish pairs well with frozen egg rolls.
