2 Skinless chicken Breasts
1/4 cup Grated carrot
1/2 tbsp. Peanut butter
6 Large mushrooms
1/2 cup Onion or 2 tbsp green onion tops
1 clove Garlic minced
Non-fat cooking spray
Sauce:
1.5 tbsp Soy sauce
1 tsp Sesame oil
1/2 clove Garlic minced
1/4 tsp Rice or apple cider vinegar
1/4 tsp Fish oil
1/4 tsp Dijon mustard
Dash of Red Pepper flakes
Dash of Splenda
Salt and Pepper to taste
Preparation
Cube chicken breast into small pieces (about 1/2 inch squared).
Cook chicken breast in frying pan or wok with non-fat cooking spray
When chicken is thoroughly cooked set aside.
Add diced onion, diced mushroom to pan and cook for 10 minutes add 1/2 clove minced garlic for last two minutes. Drain if watery.
Add chicken back to pan with vegetable mixture above, and sauce mixture and stir fry on med high heat until warm (2-3 minutes). Add peanut butter and carrots and stir into mixture cooking for and additional 1-2 minutes.
Serve hot on lettuce wraps.
