Nutty Salmon

Lots of omega fatty acids make this a meal for the heart.

Ingredients

4 Fillets Salmon

2 tbsp Olive oil

1/2 cup Chopped walnuts

1/2 cup Sliced almonds

1 cup Bread crumbs (preferably Italian)

1-2 cloves Garlic

1/4 cup Green onions

Preparation

Preheat oven 350 degrees. Place salmon fillets on baking tray. Put walnuts, almonds, bread crumbs, garlic and onions in food processor and chop. Add oil as mixture is blending. Mixture should be the consistency of a thick paste (add more oil if mixture is too dry, add more bread crumbs in too thin). Spread paste over salmon fillets. Cook for 10-20 minutes (until fish flakes with a fork). Once done, place under broiler for 1-3 minutes, until paste is a golden brown crust. Serve immediately

Cook's Notes

While this meal is high in fat, it is a blend of foods rich in omega-3 fatty acids, which are good for the heart! The nuts also add phytonutrients!
