Mini Maui Pizza Pies

All the flavors of Hawaiian pizza in a tasty biscuit cup.

Ingredients

1 cup Diced Canadian bacon
1 cup Prepared pizza sauce
1/2 cup Canned crushed pineapple,
 Well drained
1 cup Shredded low-fat mozzarella
1 can (5-count) refrigerated flaky
 Biscuits
1/4 cup Shredded Parmesan cheese

Preparation

Preheat oven to 375 degrees. Spray 10 muffin cups with cooking spray.

In medium bowl, combine Canadian bacon, pizza sauce, pineapple and mozzarella.

Separate biscuits into 5 biscuits. Split each biscuit in half to make 10 rounds. Pat each into a 4-inch circle. Press each round into prepared muffin cup. Spoon filling evenly among biscuit-lined cups. Sprinkle tops with Parmesan.

Bake 15 minutes or until golden brown and cheese is melted.

It was very good. The biscuits we used came in a package or 8, not 5, so I used one per cup, but separated one in half just to try it. I liked it best with less biscuit per cup, so half was better. This recipe could also be good with any of your favorite pizza toppings and maybe by substituting pizza dough for the biscuits (i'm not a huge fan of biscuits to begin with, I don't care for the baking powder flavor)

This was an absolute hit with my children, ages 6, 11 and 18! It's meant to be a snack, but it worked out just fine as a quick and easy dinner as well! My son had two pies and he was happily stuffed! To make it a complete dinner, a simple side salad would be just perfect! Very, very easy to make. Absolutely awesome recipe!!!! Thanks!

I have twin 2 year olds, one is very picky. He LOVED this. It will be a regular at our house. They came right out of the muffin pan and they were ate as finger food. GREAT THANKS!
