Gourmet Veggie Burgers

Delectable veggie burgers at your finger tips in thirty minutes or less ...you won't miss the meat!

Ingredients

2 Vegetarian burger patties (any variety that includes soy beans)

4 slices Sourdough bread

1 Small red or yellow bell pepper

1 Small red onion

10 Medium sized mushrooms

2 Large romaine lettuce leaves

1 Ripe tomato

2 slices Cheese - your choice

2 tbs Canola oil for sauteing

1 Splash of sherry (optional)

Optional: ketchup, mayonaisse, margarine

Preparation

1.Wash and slice peppers, onion and mushrooms into rounds.

2.Saute peppers in a wok or frying pan in a little oil until soft and slightly charred, set aside in bowl

3. Saute onion in the same pan, with a little oil, cooking until soft, then add a little sherry to get a quick carmelized affect (optional,)- saute for an additional 2-3 minutes, set aside in seperate bowl

4. Place a little oil in frying pan, put burgers in when hot, flip and cook for about 5 minutes.

5. While this is cooking, cut up tomato into slices and wash lettuce leaves.

6. Put sourdough bread into toaster.

7. Flash saute the mushrooms in the remaining oil. Put back the cooked peppers and onions into same pan or wok and reheat quickly.

7. Put cheese on burgers while still in pan.

8. Assembly: Spread your toasted bread with your favorite condiment.

Place the cooked burger with cheese on one slice. Top with vegetable medley (peppers, onions, mushrooms), two slices of tomatoes, lettuce and finally the last piece of sourdough.

Cut in half and enjoy.

Cook's Notes

Tips for a better burger:
Spread and smash the burger onto the bread to cover the entire piece, this ensures that you don't just get a bite of bread. Kids love this part.
Have plenty of napkins near by.
Its a messy dish but well worth it.

Its easy to double the recipe or vary it with different toppings of your choice.
