| 2 cups | Instant rice |
| 2 cups | Water |
| 1 cup | Raisins |
| 1 package | Instant fat-free, sugar-free vanilla pudding |
| 2 cups | Low-fat or fat-free milk |
| 2 tablespoons | Ground cinnamon |
In a glass bowl, add rice, water and raisins. Microwave on high for 8 to 10 minutes, until water has evaporated and rice mixture is soft. In another glass bowl add pudding and milk. Stir with a wire whisk for 2 minutes. Place raisin-rice mixture in a square pan. Stir in vanilla pudding. Top with cinnamon. The pudding will still be warm. Serve immediately.
