Holiday Granola Blend at Any Time of Year

This is a healthy but really delicious blend of granola, sweetened dried cranberries, coconut and whole almonds. It is very versatile and can be used as a cereal, topping for yogurt or ice cream or as a tasty snack all by itself. My children are very picky eaters and this was a big hit. The granola blend looks great in a jar to give as holiday gift or at any time of year.
Preparation
Preheat oven to 250 degrees. Line a large (14x16) cookie sheet with parchment paper. Set aside. In a medium 2 quart microwave safe bowl, combine the honey and water. Microwave on high for about 3 minutes until hot and easy to pour. In the mean time, in a large bowl, combine the oats, almonds and coconut. Set aside. Remove honey mixture from microwave. Add vanilla extract and baking soda to honey mixture. Stir to blend. Pour honey mixture over the oat mixture and combine evenly until oat mixutre is coated with honey. Place granola on the cookie sheet spreading out granola in a flat even layer. Bake for 45 minutes or until crunchy. Remove from oven and let cool for about 5 minutes. Place granola in a large bowl and add the cranberries. Stir to blend, breaking up any large clumps of granola. When completely cool, store in an airtight container.
