A no-fat tasty salad that will add color to your dinner plate. Perfect for summer barbecues and potlucks!
6 Medium carrots, peeled and shredded
1/2 cup Raisins
1 cup Pineapple tidbits, fresh or canned and drained
1/2 cup Packaged shredded coconut
1 8-ounce Container fat-free peach yogurt
2 tbsp. Fat-free mayonnaise
1/4 teaspoon Ground ginger
Shred carrots in food processor and put in large mixing bowl. Add raisins, pineapple and coconut.
In separate bowl, mix yogurt, mayonnaise and ginger. Pour over carrots and fruit and mix together well.
Refrigerate at least one hour before serving.
