Cheesy Wild Rice Soup

This soup is full of veggies, cheese and wild rice. It makes a hearty meal any time of the year.

Ingredients

1/2 pound Bulk pork sausage
1 Medium onion, chopped
2 stalks Celery, chopped
1/3 cup All-purpose flour
3 cups Chicken broth
1 can (14 ounces)wild rice or 2 cups cooked wild rice
1 package (10 ounces) frozen mixed vegetables or chopped broccoli, thawed
2 cups Shredded Cheddar cheese

Preparation

Cook and stir sausage, onion and celery in Dutch oven until pork is no longer pink and onions are tender. Drain fat. Stir in flour; cook and stir 1 minute. Gradually stir in chicken broth; bring to boil, stirring occasionally. Stir in wild rice and vegetables. Reduce heat and simmer 5 minutes or until vegetables are tender. Stir in cheese, stirring just until cheese melts. Season to taste with salt and pepper, if desired.

I needed to use leftovers so instead of pork sausage, I used leftover shrimp and salmon and for the vegetables I added cut up leftover asparagus. I added some dill seasoning and the result was really wonderful. I'm going to make this " leftover soup" again!
