Ingredients
1 16 oz Package dry penne or spiral pasta
2 tbsp Olive oil
1 Ripe mango, peeled and diced
1 Red onion, cut into strips
1 Each yellow and orange bell peppers, cut into strips
1 Fresh red chile pepper, diced
1 28 oz Can crushed tomatoes
1/2 c Red wine
1 Bay leaf
3 Whole cloves
1 Cinnamon stick
1 lb Andouille sausage, sliced into 1/2 inch thick pieces (about 1 inch diameter)
Salt to taste
2 tbsp Honey
1 tbsp Red wine vinegar (optional)
1 c Fresh cilantro, chopped
Preparation
1. Bring 1 quart water to a boil. Add pasta and cook until al dente (about 10 minutes). Drain and set aside.
2. Heat oil in a large saucepan over medium heat. Stir in mango, onion, and peppers. Cook until tender (7-10 minutes).
3. Mix in tomatoes and wine. Add bay leaf, cloves, and cinnamon stick. Cook, stirring occasionally, for 10-15 minutes.
4. Meanwhile, cook sausage in a nonstick pan on medium heat until browned and fully cooked. Drain fat (blot with paper towels to remove even more fat).
5. Remove bay leaf, cloves, and cinnamon stick from sauce. Season with salt. Stir in honey (and red wine vinegar). Mix in cilantro, sausage, and pasta.
6. Serve and enjoy!
