Ingredients
2 t. Olive oil
2 Large cloves garlic, minced
Grated peel and juice of 1 lemon, seeds discarded
1/4 t. Coarsely ground black pepper
4 Large skinless, boneless chicken breasts, trimmed
1/4 c. Chicken broth
2 t Butter or margarine
1 pound Fresh asparagus, washed, drained and trimmed
Preparation
Preheat oven to 400 degrees. Wash, drain, and trim the asparagus and set aside.
In a small skillet, heat the olive oil over medium heat. When oil is hot, add minced garlic and saute for seconds, just until fragrant. Stir in the fresh lemon juice and ground pepper and bring mixture to a boil. Remove from heat and set aside.
Arrange chicken in lightly buttered shallow baking dish just large enough to hold the chicken in a single layer. Pour garlic-lemon mixture over chicken. Sprinkle with lemon peel. Cover with foil and bake for 15 minutes. Check to see if chicken is cooked through and remove from oven. (Be careful not to overcook the chicken breasts - they will continue cooking even after you remove them from the oven.)
Pour liquid from the baking dish into the small skillet. Place the fresh asparagus on top of the chicken to steam and re-cover the baking dish. Set aside.
In the small skillet, add chicken broth to the liquid from the baking dish and bring mixture to a boil. Cook until reduced by about half, stirring occasionally. Gradually whisk in butter a teaspoon at a time. Pour sauce over chicken, garnish with lemon slices, and serve immediately.
May be served with rice or couscous.
Cook's Notes
Occasionally the garlic may turn blue during cooking. This is a natural occurrence from the acid in the lemon reacting with the enzymes in the garlic. It does not affect the flavor of the garlic or its safety. It's actually rather interesting!
