Though this recipe requires having several Asian ingredients on hand, it is a delicious, light meal that is just as tasty to have for leftovers! Serve to guests with fortune cookies and green tea or lime sorbet for dessert and they'll rave about it!

1 pound Chicken breasts-thinly sliced in strips
Dressing:
1/3 cup Rice vinegar
1/2 cup Sugar
3 tbsp. Vegetable oil
2 tbsp. Honey
1 tbsp. Trans fat free margarine
Chicken Marinade:
1 tbsp. Rice vinegar
2 tbsp. Light soy sauce
1 tsp. Sesame oil
1 tbsp. Mirin wine (reduced sweet sake)
1 tsp. Hot chili sauce (Sriracha)
2 tbsp. Sake
1 tbsp. Cornstarch
1 tsp. Sherry
1 tsp. Sugar
Salad:
8 cups Napa Cabbage-chopped
1-cup Carrots-julienne cut
1/2 cup Green onion-chopped
1 package Top Ramen noodles (use without the seasoning)
1/4 cup Almond slivers
1 1/2 cup Mandarin oranges
Garnish:
1/4 cup Green onions-chopped
Sesame seeds
Preparation
Directions:
1. First mix together all ingredients in marinade list in a bowl. Add sliced chicken breasts and set aside to marinate for 10 minutes.
2. Combine 5 ingredients under dressing list in a small saucepan. Bring to a boil; put in refrigerator to cool.
3. Chop Napa cabbage and green onion and julienne carrots; mix together with mandarin oranges in a bowl.
4. Combine almonds, Ramen noodles (break into pieces), and vegetable oil in a pan. Saute until slightly golden and add to cabbage,carrot and orange mixture.
5. Saute chicken breasts on high for 4 to 5 minutes or until cooked through. Add marinade and cook together for approximately 2 minutes. Let chicken cool for 5 minutes.
6. Toss cabbage, carrot, green onion, Ramen noodle, oranges, and almond mixture with cooled dressing. Serve in chilled salad bowls. Top each salad with marinated chicken, green onion, and sesame seeds.
