Ingredients

1/2 tsp Unsalted butter
1 lb Capellini
1/2 c Heavy cream
1 1/2 c Fresh grated parmesan reggiano
Salt & pepper

Preparation

Place baking rack on upper half and preheat oven to 425. Grease baking sheet with butter. Cook pasta with salt al dente. Reserve 1/2 C of pasta water.

Combine cream and 3/4 cup of cheese in large bowl. Add pasta & reserve pasta liquid using only what is needed to loosen consistency of noodles. Season with salt and pepper and toss to combine. Transfer to baking sheet and sprinkle with remaining cheese.

Bake until golden brown and crisp around the edges, about 15-20 minutes. Cool for 5 minutes and cut into 8-10 rectangles.
