A Monday-night favorite in our house, a great way to use up leftovers in the frig. Warm, tasty, nutritious, kids love it!

Ingredients

1 cup Leftover meat, chicken, fish, shellfish

2 Italian sausages, skinned (optional)

2 Green onions, chopped

1/2 Each red and green bell pepper, chopped

1 Tomato, chopped

1 cup White or brown rice

1 1/2 cups Chicken stock or water

Preparation

Heat a 4 quart saucepan over medium heat. If using sausages, saute them until brown and break them into chunks. Add vegetables, and saute for a minute longer. Add rice and meats, and stir to combine. Add stock or water, and cook, covered, for 20-25 minutes until rice is done.

Nutrient analysis based on chicken. Sausage not included in analysis.

For a complete protein, you can serve this dish with traditional red beans (see additional recipe).

Depending on the meats you use, you may want to add them at the end of the cooking so they don't become mushy. Afer serving my shellfish-adverse son, I toss in a few frozen shrimp from the freezer for myself. Yum!

I made this recipe with the sausage and large shrimp and I used wild rice. It was fabulous and even my daughter wanted the recipe.
