Rice Bowl with a Twist

In your mind, imagine a rice bowl with a taco twist:

Ingredients

1 cup White rice

1 pound Lean ground turkey

1 package Taco seasoning (3 oz)

Water as need for taco seasoning

1 cup Red kidney beans

1 cup Light jack cheese

1 Medium tomato, chopped

1 cup Fresh spinach, chopped

Preparation

In a small saucepan, prepare rice according to package directions. Set aside. Prepare ground turkey in a small frying pan. Add taco seasoning and water. Cook until tender. Add kidney beans. Cook a few more minutes, until heated.


In your favorite rice bowl, layer rice, taco mixture, cheese, tomatoes and spinach. Serve immediately with a fork or chopsticks. A fun, easy meal.

Cook's Notes

This is a fast, after-work, after-school meal. Rice bowl is one of our favorites, and this recipe with a twist is a little less messy.

On the right side of the page it says the recipe is for 4 servings

1 serving of meat is 3 ounces (about the size of a deck of cards)

1lb of turkey is more like 3 to 4 servings, depending on if the rice is cooked or not. How much meat is one serving? 4 or 6oz right?
