Some green bell pepper, cut into thin strips
Some onion, finely chopped
Some garlic, minced
Eggs. beaten

Preparation
Sauté the peppers, onion, and garlic in olive oil until the peppers are wilted. Add the beaten eggs and cook the whole mixture until done. If adding mozzarella, mix that in just before the eggs are completely cooked. Serve with bread (for a sandwich) or toast.
