Ingredients
2 3/4 cup Flour
1 1/2 cup Sugar
1/2 cup Butter
2 1/2 tsp. Baking powder
1 tsp. Salt
1-12 oz. Pkg. White chocolate chips
2 cups Almonds, toasted and chopped
2 Eggs
1/4 cup Orange juice
1 tbsp. Orange peel
1 tbsp. Vanilla extract
1 tbsp. Almond extract
1 1/2 cups (6oz.) dried cranberries
Preparation
Beat butter and sugar in a large mixing bowl. Mix together eggs, orange juice, and extracts. Mix into butter mixture. Add in flour, baking powder, and salt. Stir in almonds, white chocolate chips, orange peel and cranberries.
Divide dough into thirds and roll each into a log, 12-inches long and 2-inches wide. Place on greased baking sheet. Bake at 350 for 25-30 minutes. Remove logs from oven and cool 2-3 minutes. Cut each log into 3/4-inch slices and place each slice on its side on the baking sheet. Bake at 300 for 10-15 minutes longer, depending on how crunchy you like them. Makes 4 dozen.
