Yummy pizza with a mashed potato middle!

Ingredients

1 lb. Boneless chicken breast
1 cup Broccoli florets, cut small
4 Medium red-skin potatoes
8 oz. Pkg. shredded cheddar/Monterey Jack cheese
1 Pizza dough (buy from grocery store or get a local pizza shop)
4 tbsp. Butter/margarine
1/4 - 1/2 cup milk
Non-stick spray or shortening
Cornmeal or flour

Preparation

Cut chicken into a small bite-sized dice. In a small fry pan, simmer chicken pieces in a little butter/oil until done. In a small saucepan, steam broccoli until slightly tender. Remove from heat and allow to cool. Meanwhile, boil potatoes to mash. Mash potatoes with the butter and milk to a "spreadable" consistency, a little on the thin side. Salt and pepper to taste.


Preheat oven to 400F.


On a cookie sheet, spray with non-stick spray or spread with thin coating of shortening. Sprinkle with cornmeal or a little flour. Spread pizza dough on cookie sheet as if making a pizza. Spread the mashed potatoes evenly over the dough. Top with half the cheese then the chicken and broccoli, and then the last of the cheese.


Bake about 15 minutes, until the crust is browning and the cheese is melted and bubbly. Cool for a few minutes the cut and eat like a pizza.

Cook's Notes

Have the kids help you "sprinkle" the toppings on the pizza (making sure they are cooled). You could use leftover chicken, cut up. Really, you could top the "pizza" with whatever you desire. Bacon bits are very good too!
