Cheesy Ham and Spinach Quiche Casserole

Great for any time of the day. The versatility of this quiche makes it a popular dish from my kitchen.

Ingredients

8 slices Day old bread, torn into small pieces

1/2 teaspoon Salt

1/2 teaspoon Black pepper

1/4 cup Thinly sliced green onions

2 (8 oz. ) pkg. frozen chopped spinach, thawed and squeezed dry

1/2 lb. Deli ham, coarsely chopped

1 cup Shredded mozzarella cheese

1 cup Shredded swiss cheese

6 Eggs, slightly beaten

2 cups Milk

1/4 cup Canned pimento strips, drained

Garnish:

Parsley sprigs

Preparation

In 9x13” lightly greased baking dish, spread bread pieces evenly. Sprinkle with salt and pepper. Place next three ingredients evenly over bread. Sprinkle with cheeses. In a large mixing bowl, beat together eggs and milk. Pour over cheeses. Place pimento strips as desired on top. Cover and refrigerate overnight. Preheat oven to 350 degrees. Remove from refrigerator and let reach room temperature. Bake uncovered about 55-60 minutes. Cool slightly before cutting into squares. Garnish each square with a parsley sprig before serving. Serve warm.

Cook's Notes

I often add mushrooms, green chilies, or other vegetables I have on hand. Other meats may be substituted as desired.
