A yummy, easy, and colorful salad with some snap.

Ingredients

2 Large cucumbers, peeled and cut into bite-sized pieces

2 Carrots, chopped in half and shredded

1 Medium sweet onion, chopped

1/4 cup Golden raisins

1/4 cup Dried cherries or cranberries

1/4 cup Pine nuts or sunflower seeds

1/2 cup Low-fat, low-sodium Italian dressing

1/8 tsp. Cayenne

Salt to taste

Preparation

Mix all ingredients and serve immediately or chill a few hours and serve, this is great either way.

Cook's Notes

I have served this low-cal, low-fat salad any season with sandwiches, soup, or with a big meal.
