Ingredients
1/2 pound Mild Italian turkey sausage, casings removed
2 cans (14.5 ounces each) beef broth
1/2 cup Water
3 Medium zucchini, sliced
1 can (8 ounces) tomato sauce
1 can (8 ounces) garbanzo beans, undrained
1 can (8 ounces) sauerkraut, rinsed well
1/2 cup Dried small shell pasta
1 teaspoon Dried Italian herb seasoning
1/4 cup Grated Parmesan cheese
Preparation
Cook sausage in large, heavy saucepan over medium-high heat until browned, stirring to break up sausage. Drain off fat. Stir in broth, water, zucchini, tomato sauce, beans, sauerkraut, pasta and herb seasoning. Bring to a boil. Reduce heat to low. Cook 10 minutes or until pasta is tender. Serve sprinkled with Parmesan cheese.
Cook's Notes
Sauerkraut sounds a little unusual; give it a try. But if you can't, use 1 cup thinly sliced cabbage instead.
