Tofu Rounds

Tofu Rounds are great for kid snacks, or served with pasta.

Ingredients

1 lb. Firm tofu

1 t. Peanut butter(or almond butter

1 to 2 t. Soy sauce (or tamari)

2 t. Finely chopped onion

1 1/2 c. W.w flour (or white.)

1/4 to 1/2 cup Safflower oil

Preparation

Rinse tofu well under cool water. Put in large mixing bowl. Wash your hands for this. Using your hands, mix together well until all tofu is mashed. Add peanut butter, soy sauce, chopped onion, and 1/2 c. flour. Mix together with tofu until completely mixed. You may need to add more flour, the dough should not be sticky. Heat oil in fry pan at medium. Roll tofu mixture into 11/2 inch balls. Roll balls in remaining flour and fry in oil 5 to 6 minutes on each side. Kids love to help make them and eat them.

Cook's Notes

You can also add green pepper for extra flavor. Goes well with spagetti.
