Japanese Sesame Noodles

This cool summer dish will lighten up the table on a hot day. Make extra to keep in the fridge for a delightful midnight snack.

Ingredients

1 9oz. Package somen (buckwheat noodles) or 9oz. of spaghetti

1/4 cup Sugar

1/4 cup Rice vinegar

1/4 cup Soy sauce

2 tablespoons Sesame oil

2 cups Shredded lettuce

1 Large cucumber, seeded and slivered

1 Carrot, grated

1/2 pound Ham, slivered

1/2 cup Chopped cilantro

1 tablespoon Toasted sesame seeds

Preparation

Cook noodles according to package directions. Drain, rinse under cold water to cool, and drain again. In a small saucepan, combine sugar, vinegar, soy sauce and oil. Heat over low flame, stirring, until sugar melts. Remove from heat and chill. Place noodles on a large platter, then top with lettuce, cucumber, carrot, ham and cilantro. Sprinkle top with sesame seeds. Pour chilled dressing over salad.

Cook's Notes

Salad can be prepared several hours in advance,covered with plastic wrap in the fridge. Reserve dressing and pour over salad just prior to serving.
