Orange Pepper Chicken Pasta

A really quick dish that makes a tasty meal when served with a nice green salad ..... kids love it and can help you prep....

Ingredients

2 tablespoons Olive oil

2 Medium cloves garlic, finely crushed

2 Medium shallots, chopped fine

1 Medium red bell pepper, cut into very thin slices

1 Medium green bell pepper, cut into very thin slices

1/2 pound Boneless chicken cut into very thin slices

1/2 pound Capellini (angel hair) pasta broken to 2" lengths

1 teaspoon Crushed red-pepper flakes

Salt and freshly ground pepper to taste

8 ounces Florida's Natural (R) orange juice

8 ounces Water

Juice of half a lemon or lime

Freshly grated Parmesan

Finely diced fresh basil or chives make a nice garnish.

Preparation

Prep everything before starting dish .... this is real quick, .....but real tasty...


Heat the olive in a large skillet over medium high heat. Add garlic, and cook until bigins to color, about 2 minutes.


Add chicken cooking quickly for 90 seconds


Stir in shallots, bell peppers, and pepper flakes, and season with salt and pepper; cook for only 60 seconds, stirring.


Turn heat to high...Add capellini for 30 seconds.


Add pepper flakes


Add Orange Juice... as orange juice is almost absorbed

..add water when necessary until capellini is "el dente".... about 90 seconds.


Move skillet of heat....Squeeze in the Lemon Juice, stir.


serve immediately with Freshly grated Parmesan and

finely diced fresh basil or chives as garnish.
