Farfalle with Broccoli & Sausage

A delicious and healthy recipe that takes little time to prepare, especially if some ingredients are prepped the night before. Served with crunchy Italian bread and a tossed salad, it's a meal worth repeating.

Ingredients

1 package Farfalle pasta (12 oz)

3 tb Olive oil

3 cloves Garlic, minced

4 cups Chopped broccoli

2/3 cup Diced roasted red peppers

3/4 tsp Red pepper flakes

1 cup Chicken or vegetable broth

1 lb Turkey sausage, removed from casing

Preparation

(NIGHT AHEAD: Cook turkey sausage until browned, wrap and refrigerate. Wash and chop broccoli; refrigerate.)

Prepare pan of water for pasta and set to boil. Meanwhile, in large non-stick skillet, lightly brown garlic in olive oil. Stir in remaining ingredients and cook over medium heat, partially covered, until broccoli is just tender (approximately 5-7 minutes). Cook pasta to al dente and add to skillet, stirring to blend. Serve sprinkled with grated parmesan, if desired.

Cook's Notes

I first tried this dish for a dinner party and had everyone at the table asking for the recipe. For younger children, the red pepper flakes can be omitted until their portion is removed. For a vegetarian dish, the turkey sausage can be substituted for meatless vegetarian sausage, found in most supermarkets. This is truly an enjoyable meal.
