Quick Seafood Bake - make it for tonight or freeze for later.

Ingredients

1 8 ounce Package stuffing mix

1 cup Milk

1 cup Low fat Mayo

1 Small onion, diced

1/2 cup Crushed almond slivers

1 t. Dillweed

1 t. Garlic powder

1 8 ounce Package fake crab legs, sliced into small pieces

2 Eggs - scrambled and choppped

1 cup Cheddar cheese, shredded

Preparation

Lightly spray 9" square pan with PAM or similar. Beat 2 eggs and place in microwave oven and cook until scrambled consistancy. Mash with fork. Mix all other ingredients,except cheese, add eggs, and pour into greased pan. Top with cheese and bake in 375 degree oven for 20 - 25 minutes.

Cook's Notes

This dish can be doubled, tripled, etc. and made into multiple casseroles. Bake one for now and remove the others after about 15 minutes (partially baked). Cool, cover tightly and freeze for later meals. When ready to use - thaw and bake for 15 - 20 minutes.

Add vegetable and green salad for light meal, luncheon, or even brunch.
