Colorful veggies and alphabet noodles attract kids to this nutritious soup!
2 cans Low sodium chicken broth
1 cup Cooked chicken breast,cubed
1-1/2 cup Frozen mixed veggies (corn,peas, carrots)
1/4 c. Chopped parsley
1/4 c. Chopped onion(opt.)
1 c. Alphabet shaped pasta
Bring broth to boil, add all other ingredients and simmer at low rolling boil until pasta is tender(about 20 minutes).
Herbal seasoning(such as sage, savory, rosemary) may be added as desired--children however, often prefer food with less seasoning.
Approximately 6 1-cup servings
This soup contains far less sodium than canned varieties and takes only a minute or so longer to prepare. If your child prefers particular veggies or only one, adjust for preference! To lower the sodium even further, "from scratch" chicken broth can be made by cooking fresh chicken in small amount of water to cover and simmering til chicken is done.
