Smilin' Muffins

Easy snack: Nutritious AND appealing to children!

Ingredients

1 c Quick or rolled oats

1/4 c Toasted wheat germ or flax seed

1/4 c Whole wheat flour

1/2 c Enriched flour

1 tsp. Baking powder

1/3 c. Sugar

1 tsp. Cinnamon

1 6 oz. Container yogurt (any flavor)

1 Egg, beaten

1/3 c. Orange juice

1/3 c. Dried cranberries or raisins

1/4 c. Finely chopped almonds

Preparation

Mix all dry ingredients together by spoon in large mixing bowl . In small bowl mix yogurt, egg, and orange juice. Add wet mixture to dry, stirring with spoon until just moistened. Spoon into muffin tins lined with paper or greased well.

Press raisins or dried cranberries barely into surface creating smiley faces. Sprinkle lightly with almonds. Bake at 400 for 20 minutes or until golden brown. Remove muffins promptly from pan when done. Cool slightly. Makes approximately 12 muffins.

Cook's Notes

The batter can be mixed ahead of time, stored in the refrigerator for up to 48 hours and baked as needed.Easy for children because no electric mixer is required and they enjoy making smiley faces!Recipe can be easily doubled for large group.
