Spinach Squares

A great way to get kids to eat their spinach, very tasty!

Ingredients

1 lb Sharp cheddar cheese
2 (10 oz) packages Frozen chopped spinach
1/2 stick Butter or margarine
1 cup Flour
1 cup Lowfat milk
3 Eggs, beaten
1 tsp Salt
1 tsp Baking powder

Preparation

1. Drain defrosted spinach well.

2. Melt butter in baking dish. Mix together flour, baking powder, salt, eggs, spinach and cheese.

3. Smooth into baking dish. Bake at 350 for 35-40 minutes.

It worka well with cottage cheese added too.

I think this would taste better with fresh spinach. My ultra-picky 3-year-old did try it, & ate a litte. So I felt like it was successful. Not the best way I've eaten spinach, but not too bad. Very cheesy!

This is delicious and easy but I definitely use LESS BUTTER ... one to two tablespoons is quite enough!! I also used 1 bag of fresh chopped spinach. I like the idea of the mini muffin tins too!

I loved this. If I make it again, I might half the recipe, use low-fat cheese, and use mini muffin tins!
