My version of a local gourmet shop's recipe

A delicious, colorful, easy to prepare salad. Great as a side dish or rolled in a tortilla for a sandwich.

Ingredients

1 can Black beans, drained and rinsed
1 8 oz Can unsalted niblet corn, drained
1 Shallot or small red onion, chopped
3 Green onions, sliced
1 Bell pepper (any color) chopped
Greek style vinaigrette

Preparation

Combine first five ingredients. Add vinaigrette to taste. Refrigerate until ready to serve.
