Chicken Provencale

Great taste, one pan, easy to put together. Serve with noodles or rice.

Ingredients

1 Large green pepper, sliced

1 Medium onion, sliced

1/2 lb. Mushrooms

8 Whole large boneless chicken breasts halves

1 14 to 16 oz. Can tomatoes with juice

1 6 oz. Can of tomato paste

1 tblsp. Fresh or 1 tsp. dried basil

1/2 tsp. Salt

1/2 tsp. Sugar

Preparation

Preheat oven to 400.

In a large casserole or ovenproof dutch oven mix everything except chicken. Add chicken, turning to coat with tomatoe mixture. Cover and bake 20 minutes occasionally basting chicken with sauce. Remove cover and bake 10 minutes more or until chicken is tender.

Great and easy recipe - although it did take longer to cook than indicated. Served over brown rice for a low fat, low calorie meal.
