Bok Choy Salad

A wonderfully crunchy,healthy salad which adds
a tasteful variety to your normal everyday salad.

Ingredients

1 Head of Bok Choy-chopped

1 bunch Scallions-sliced

2 - 3 ounce Packages Ramen noodles

1/2 cup Slivered almonds

1/3 cup Sunflower seeds

1/2 cup Craisins

2 Tablepoons garlic olive oil

Dressing

3/4 cup Olive oil

1/4 cup Red wine vinegar

2 tablespoons Soy sauce

1 1/2 tablespoons Sugar

Preparation

Brown ramen noodles, sunflower seeds and almonds in 2 tablespoons garlic olive oil til lightly browned.

Chop the Bok Choy into small

pieces, making sure to use the

white portion of the stalk. Mix

together with the remaining salad ingredients. Make the dressing and

shake well before using. Put the

dressing on just before serving.

Cook's Notes

May sustitute regular olive oil
when browning noodles and nuts.
May substitute your choice of
seeds also.
