6 oz Left over salmon
2 Eggs
1 cup Left over spinach
2 Roma tomatoes, rough chopped
1 cup Chopped mushrooms
Salt and pepper to taste
Preparation
1. pre-heat pan to medium heat, lightly oil
2. saute spinach lightly
3. add tomatoes and mushrooms, saute 4-5 minutes
4. whisk eggs with salt and pepper
5. add eggs to pan, stirring constantly until hard scrambled
