This is a quick, low carb recipe that I created while on Atkins. My family, especially the 6 year old loves it. It tastes even better the next day.
1 pound Skinless, boneless chicken breast or tender strips
1 tbl. Olive Oil
2 tsp. Seaoned Salt
3 Strips Bacon
1 bag Frozen pepper stir-fry
2 cups Shredded Mexican Four Cheese or cheddar cheese
Cooked rice (optional)
Rinse and dry chicken with papertowel. Rub with olive oil and sprinkle with 1 tsp season salt. Let it sit for 5 minutes. Turn chicken over and sprinkle with remaining salt. Meanwhile, fry bacon in a 10 inch skillet until done (about 3 min on each side). Remove bacon, crumble and set aside. Add chicken to the skillet and cook until the meat turns white (about 5 minutes. Pour pepper stirfry into skillet. Cover and simmer for 10 minutes, stirring occasionally. Just before serving add bacon to skillet and stir. Place serving on plates and top with cheese. Delicious with or without rice.
Chicken can be prepared ahead of time. Try this served in warm tortillas with lettuce and chopped tomatoes as well. I do not suggest using bonless, skinless thighs.
