This is a great main dish for a crowd. It is easy, inexpensive and tasty. It is vegetarian when made with soy crumbles but can also be made with a lb of ground beef.
1 lb White long grain rice
1 lb Soy cumbles
1 can Cream of mushroom soup
1 can Cream of celery soup
1 can French onion soup
2 cans Water
1 tbs Cajun seasoning(or paprika, garlic powder and cayenne to taste)
1/4 cup Dried onion flakes
1 Chopped bell pepper
2 stalks Celery, chopped.
Preheat oven to 350 degrees.
Mix all ingredients in a bowl. Pour into a large (11x13) or equivalent baking pan. Make sure there is plenty of room for rice to expand. Cover tightly with foil and bake for 70 minutes or until rice is tender.
This can be prepared in advance and reheated in the microwave with the addition of a little liquid. Leftovers make a great soup base when mixed with either chicken or beef broth.
