Sesame Chicken and Rice Salad
Ingredients
12 oz Boneless skinless chicken breast cut in 1" strips
1/2 cup Soy sauce
2 tsp Minced bottled garlic
1 cup Quick cooking brown rice
1 bag (7 oz)prewashed butter lettuce
12 Cherry tomatoes halved
1 cup Chopped fresh broccoli florets
2 tsp Sesame oil
1 cup Chopped fresh cauliflower
2 tbsp Asian spice mix
1 1/2 tbsp Sesame seeds
1/2 cup Italian salad dressing
Preparation
Combine chicken breast strips, soy sauce and garlic in a 1 gallon size ziploc bag. Shake to coat and set aside.
Prepare brown rice according to directions on package.
Combine lettuce, tomatoes, broccoli and cauliflower in a large bowl toss to mix.
Heat sesame oil on medium heat in a 10' skillet.
Add Chicken mixture and asian spice mix and sesame seeds to pan and stir fry until chicken is cooked through (about 10 minutes).
Allow to cool slightly.
Add rice and chicken to vegetables and toss.
Add dressing and toss to coat.
