Lickety Split Lasagna Soup

Here's a "soup-er" hearty meal that tastes like lasagna without all the preparation and cooking time. It's great served with a green salad and crusty bread. This speedy soup simmers in less than a half hour and tastes so good everyone will ask for more.

Ingredients

1 lb. Ground beef
1 Medium onion, chopped
2 (14-1/2 oz.) cans diced tomatoes
1 (15 oz. ) can tomato sauce
1 (14-1/2 oz.) can beef broth
1 1/2 cups Water
1 tablespoon Brown sugar
2 teaspoons Dried basil
2 teaspoons Dried oregano
1 teaspoon Salt
1 teaspoon Dried thyme
2 cups Mini lasagna noodles (American Beauty) or rotini pasta
1/4 cup Grated Parmesan cheese
1 1/2 cups Finely shredded mozzarella cheese

Preparation

Brown ground beef in dutchoven or stockpot; drain. Add onions, diced tomatoes and tomato sauce. Stir in beef broth, water, brown sugar and four spices listed. Bring to a boil and add mini lasagna noodles or pasta. Reduce heat and simmer for 20 minutes, stirring occasionally. Stir in Parmesan cheese. Garnish each bowl with mozzarella cheese. Makes 6 to 8 servings.

Reduce the sodium in this dish with any or all of these options: use reduced-sodium beef broth, choose reduced-sodium tomato sauce and/or reduce or omit the teaspoon of added salt.

Amazing soup. My 16 year old doesn't like to try new recipes and he really enjoyed this. Made an extra batch and put it in the freezer. This recipe has amazing flavor and is a keeper!!

This is the BEST soup- I found your recipe last week, and have already made it twice! I do recommend, after trying both lasagna noodles cut into smaller pieces as well as a rotini style pasta and by far the lasagna noodles cut into smaller pieces were the best. Also- I add garlic powder (can't ever have enough garlic!) and a bit more brown sugar than the recipe calls for. SO DELISH! Thank you for posting this!

My fiance hates lasagna, but I attempted this soup & was so pleased with the results. he absolutely loved it! I omitted the parmesan, used colored rotini, & added a lil mozzerella for topping & it was absolutely delicious. A must try!

Even my picky three year old loves this! I did make a change; I used Italian sausage instead of ground beef and added garlic. However, I am one of those cooks that believes ther is no such thing as too much garliuc! This was even better the next day.

We had everyone, a family of 5, go back for seconds...no leftovers :( We had one person who isn't fond of cheese, so the cheese was left to be put on top for us cheese lovers.

I am a huge lasagna fan so to be honest I was skeptical but this soup is GREAT! Even my hubby who hates pasta liked it! Its a great meal if you please the picky eaters!!

Best soup recipe ever!! When everybody in a family of eight loves it...you know it's a hit! And to think I almost passed on this recipe...what a shame that would have been! Great contribution. 8 thumbs up!!

You can replace ground beef with canned beans for a vegetarian option. I've made this in the crock pot for an easy meal on busy nights.
