great side dish!!

Ingredients

1 cup White rice

1 can Coconut milk

1 cup Water

Preparation

on medium-high in a pot, for two minutes sautee rice in a couple tablespoons of the coconut milk Add rest of coconut milk and water, bring to a boil, cover

then reduce heat to low. Simmer until liquid is reduced. (approx. 20 min.) Fluff with a fork and serve.

Cook's Notes

seasoning with salt, pepper, or any other spices is optional. This recipe is number one on my two year olds list of favorites

I also add ginger,along with diced bell pepper,onion,frozen peas and carrots. Not too much salt, will take away the natural flavor

rice, will be much tastier by adding about 3cm thinly sliced (stick-like) ginger , some sliced shallot and a tsp of salt .
