Smoked Salmon and Blue Cheese Salad

Smoked salmon and blue cheese salad with bagel croutons.

Ingredients

6 oz. Smoked Salmon flaked

6 cups Romaine lettuce torn

1/2 Sweet red onion thinly sliced

3/4 cup Crumbled blue cheese

1/2 cup Cashews crushed into small peices

Tomatoe wedges optional

2 Onion bagels cubed(Landers)

Cooking spray

Blue cheese dressing

Salt and pepper to taste

Preparation

Pre-heat oven to 300 degrees. Spray baking sheet with a non stick spray and spread out cubed bagels. Bake 10-15 minutes until cubes are lightly toasted, shaking about half way through for even toasting. While croutons are toasting, combine luttuce, onion, salmon, blue cheese and cashews. Add croutons when cooled and lightly toss with your favorite blue cheese dressing. Garnish with tomatoe wedges if desired. Salt and pepper to taste.
