Avocado, Bacon & Lettuce Sandwich

For anyone who needs a quick snack or meal, an avocado, bacon and lettuce sandwich is the perfect nutritious way to do it. This snack is low in fat and very delicious!

Ingredients

1 half An avocado (peeled)

3 slices Bacon (low-fat turkey bacon preferably)

3 Large leaves of lettuce (you can add tomatoes if you like for extra flavor)

2 slices Wheat bread

Preparation

First cook two to three slices of bacon in skillet (can also be microwaved up to 2 mins for the less patient) If microwaving bacon, place slices on a microwave safe plate on a folded paper towel and cover with an additional towel. When removing bacon from microwave, be careful of scalding steam.


While the bacon is cooling, take one half of an avocado and slice thickly or thinly as is your preference. Place slices on one piece of bread.


Now take your bacon and gently fold it over and place it ontop of the avocado slices.


Place lettuce slices over bacon and close sandwich. You can add an olive (green or black) as a garnish.

Cook's Notes

If you use a small avocado, one avocado will be enough for about 1.5 sandwiches. Larger avocadoes will make up to 2.5 sandwiches depending. The thinner your slices of avocado, the more sandwiches you can make.

In my sandwiches, I use Butterball 65% fat-free turkey bacon which has a serving size of 2 to 3 slices of bacon with less than 5 grams of fat. I also use Nature's Own wheat bread which has 1 gram of fat per slice of bread. I normally use half of a large hoss avocado. Be sure to remove any brown patches from the avocado before eating.

The main point of this recipe was to improve on a snack I love and add some flavor to it while still keeping it fat-free (I am currently on a restricted low-fat diet.) My dad introduced me to avocado sandwiches as a kid and I never outgrew them.
