CHICKEN CAYENNE

This chicken dish is not only simple to prepare, it is delicious and nutritious as well. Its ingredients wil allow you to alter the flavor to everyone's palette, weather it's spicy they want or a more subtle flavor. Enjoy!

Ingredients

2 tsp. Oil

1 Onion

1 1/2 pounds Chicken pieces(breasts, legs, wings thighs)

1 cup Peanut Butter (any brand,chunky or smooth)

1 cup, Chicken broth

1 Large can(32 oz) of tomates (crushed or puree)

3 tsp Cayene pepper

1/2 cup Peanuts (no shells) salted or unsalted

2 cups Prepared rice (white or brown)

Preparation

Sautee onion in oil in a large pot until lightly browned,

add chicken peices and continue to sautee over low heat

add peanut butter, stir gently

add tomatoes, continue to incorporate over medium heat

add chicken broth

add 2 tsp of cayenne peper

stir all ingredients until blended well

cover and let cook over a low-med heat until chicken is cooked about 40 minutes

serve over prepared rice

garnish with peanuts

season to spice(If you want)with extra cayenne pepper

Cook's Notes

If you desire a less fat content, you can use skinless peices or chicken cutlet breasts for this recipe as well as using less salt by using no salt chicken broth and peanuts
